Zoodles with Charred Tomatoes and Chicken Sausages

Ingredients

  • 2 medium zucchini

  • 1/2 yellow onion

  • 6 cloves garlic

  • 4 Tbsp olive oil

  • 1/2c cherry tomatoes

  • 2 Tbsp Italian spices (oregano, basil, parsley- I use a blend)

  • garlic powder, pepper, sea salt to taste

  • 1/4c fresh basil, chopped

  • 1/4c shredded Parmesan cheese

  • 2 chicken sausages, sliced (could also use meatballs or a vegetarian alternative)

Heat a large pan with olive oil to medium heat. Chop onion and add to pan. Quarter garlic cloves and add those next. Add sausages and tomatoes to a separate medium pan on medium heat. Spiralize zucchini (or use pre-cut- fresh holds up better than frozen) and add to the large pan with the garlic and onions. Add more olive oil if needed and season veggies to taste with spices and salt. Cook tomatoes until some start to burst open and char slightly. Cook zoodles, stirring gently until al dente- you don’t want them to become too soft. Layer zoodles, chicken sausages, and tomatoes. Top with fresh basil and Parmesan. Enjoy!
