Black Bean Flautas

Ingredients:

  • 1tsp olive oil

  • 1 cup chopped yellow onion (1/2 an onion)

  • 1 tsp chipotle seasoning

  • 2 tsp chili powder

  • ½ tsp salt

  • ¾ tsp cumin

  • 4 cloves garlic, chopped

  • 1 can vegetarian or nonfat refried beans

  • 1 can black or pinto beans

  • 1 can (4 oz) mild green chiles

  • 2 Tbsp lime juice

  • 1 cup (1 can) corn

  • 12 flour tortillas (8”) - preferably whole wheat, but regardless make sure to check ingredients for hydrogenated oils or shortening (aka trans fat!)

Directions:

Preheat oven to 400 F. Heat oil in large pan and saute onion until brown. Add spices and heat for about 30 seconds. Add beans, chiles, and lime juice to a bowl and mash together. Fold in sauteed onions and corn. Add 2 Tbsp of the mix to each tortilla and roll tightly, using a small amount of bean to seal it shut. Coat lightly with cooking spray on a baking pan, seam down. Bake 10 minutes, flip, and bake another 5-7 minutes. Serve with salsa and avocado!
