Simple Pear & Goat Cheese Salad

Fall Pear and Goat Cheese Salad

This bright salad is perfect for sunny fall days when you're craving something lighter to balance out the comfort food we enjoy throughout the season. Making a dressing from scratch might sound daunting, but it is actually quite simple, and you can adjust the ingredient amounts to suit your taste. Replacing commercial dressings, which often contain highly processed oils, is one way to implement Natural Biohacking into your salad routine!

Ingredients:

  • 4 cups mixed greens

  • 1 pear

  • 1/4c chopped pecans

  • 1/4c dried cranberries (you may be able to find unsweetened to reduce sugar)

  • 2oz crumbled goat cheese

  • Dressing

    • 2 Tbsp balsamic vinegar

    • 1 Tbsp olive oil

    • 1 Tbsp pure maple syrup

    • 1/2 tsp dijon mustard

    • pinch of salt to taste

Directions

  1. Halve, core, and chop pears. Chop pecans if you have halves.

  2. Whisk together dressing ingredients in a small pouring vessel.

  3. Divide greens into two serving bowls. Toss with dressing

  4. Top with chopped pears, dried cranberries, goat cheese, and pecans.

Serves 2. This salad would also be excellent with a grilled chicken breast, roasted turkey, or baked salmon for a complete meal!
