Grilled Peach and Radicchio Salad

Looking to mix up your salad routine and squeeze out the last drops of summer? Try this Radicchio Salad with Grilled Peaches!

Ingredients:

  • 1 head radicchio

  • 2 peaches

  • 1/4c sliced scallions

  • 1/4c chopped walnuts

  • 1/4c olive oil

  • 2 Tbsp fresh lemon juice

  • 3 Tbsp local honey

  • 1/2c crumbled goat cheese

  • Salt and pepper to taste

Directions:

  1. Preheat cooking surface (I used my panini press). Chop radicchio, peaches, scallions, and walnuts.

  2. Drizzle peaches with 1 Tbsp honey. Lightly oil the cooking surface and grill peaches until sear marks are visible.

  3. Whisk together olive oil, lemon juice, and remaining honey. Combine with radicchio in a large bowl and toss well to combine.

  4. Top with grilled peaches, walnuts, scallions, and goat cheese. Season with salt and pepper to taste.

    Serves 2 as an entree salad, 4 as a side. Note: radicchio is quite bitter, so add a drizzle of honey or sprinkle on a bit more goat cheese on top if desired.
