Garden Quiche



  • ½lb turkey/chicken or veggie sausage
  • ½ white onion, diced
  • 4 oz sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup frozen shredded hash browns
  • ½ green pepper, diced
  • ¾ cup grape tomatoes, sliced
  • ¼ cup green onion, chopped
  • 6 eggs
  • ¾ cup milk or milk alternative
  • 1 tsp dried parsley
  • ½ tsp salt
  • 1 tsp dried basil
  • 1/8 tsp black pepper
  • 2 cups fresh spinach
  • 1 cup shredded Mexican blend cheese


Preheat oven to 400 degrees. Cook sausage and onions in a large pan. Add the spices, peppers, and spinach to wilt towards the end. Layer hash browns, spinach sausage mixture, and half the cheese in a sprayed 9x13 baking pan. Whisk the egg, milk, additional spices if desired, and the rest of the cheese in a bowl. Pour evenly over the pan and bake 50-60 minutes until a knife inserted in the middle of the pan comes out clean.
