Italian Swiss Chard

Serves 4 as a side

Ingredients:

  • 1 bunch Swiss chard
  • 1 cup water
  • 1 tsp salt
  • 2 Tbsp olive oil
  • 4 cloves garlic, coarsely chopped
  • ¼ tsp crushed red pepper flakes

Directions:

Cut Swiss chard into 1 inch strips, separating the leaves from the stalks. Bring the water and salt to a boil. Cook stalks for 2 minutes then add leaves and cook until wilted, about 6 minutes. Drain and set aside. Heat the olive oil, garlic, and red pepper in a skillet about 3 minutes until aromatic. Add the Swiss chard, cook and stir for 2 minutes. Season with salt and pepper to taste.
